Fried Pickles

Hello freakin' fantastic
This is my absolute favorite recipe that my husband makes for me. So I will share it with whoever wants it.

Crispy Fried Pickles
(8 servings)

  • 1 jar of dill pickle spears
  • Vegetable oil for frying

  • ½ C. all-purpose flour
  • ¼ C. cornstarch
  • 2 Tbsp instant mashed potatoes
  • ½ tsp cayenne
  • ½ tsp garlic powder
  • ½ tsp white pepper

  • 1 C. cold club soda
  • ½ tsp Tabasco sauce

  • 2-3 C. Panko (Japanese-style breadcrumbs), or as needed
  • 2 tsp ground dried herbs (oregano, thyme, rosemary, sage), optional
  • 2 tsp garlic salt
  • ½ tsp white pepper

Preheat oil to 350 degrees

First remove pickles from jar and let drain in strainer.  Pat pickles dry.

In bowl mix together flour, cornstarch, instant mashed potatoes, cayenne pepper, garlic powder, white pepper and whisk together. When dry ingredients are mixed pour in club soda , Tabasco sauce and mix well. Let it sit in fridge for about 10 minutes. The mixture should be slightly thick like pancake batter.

In a shallow pan line the bottom with the Panko bread crumbs, herbs, garlic salt, and white pepper. Mix together (I crush the crumbs a bit more because the finer the crumbs the thinner the crust will be).

Dip pickles first in the batter and some may come off but enough will stick for the next step.

After dipping in the batter remove and dip in the Panko mix and cover both sides completely with fork remove.

Fry 3 or 4 pickles at a time for 3 to 4 mins.  Drain on a rack and serve with Ranch.
